New Orleans-style Beignets

Ingredients


3/4 cup - Water (lukewarm)

2 1/4 tsp - Active Dry Yeast (or 1 pack)

1/4 - Sugar

1 Large egg

1/2 cup - Milk

3 1/2 cup - All purpose flour

1/2 tsp - Salt

2 tbsp - Unsalted butter (room temperature)

Vegetable oil (for frying)

Powdered Sugar

Honey (optional)


Note: Taste as you go and feel free to add, lessen, or substitute ingredients according to your preference.


Storing dough

It’s best to fry all the dough in one setting because beignets are best when they are fresh. Make sure you have a large party to feed, or fry a certain amount and leave the remaining uncooked dough in an airtight container to store in refrigerator. You can store uncooked dough up to two days.


Directions

Step 1

In medium bowl, water, yeast, and sugar. Mix together until well combined (use whisk and fork). Let sit for 10 minutes.


Step 2

Add milk and egg to mixture and whisk.


Step 3

In large bowl (or mixing bowl), add flour, salt, yeast mixture, and butter. Mix and/or knead dough until it forms a ball.


Step 4

Place dough into large oiled bowl and cover. (Use plastic wrap, damp paper towel, or seal with top). Let dough rise in a warm area for 2 hours.


Step 5

Place dough onto clean surface and use a rolling pin to roll the dough into a square, or rectangle. Then, cut dough into squares.


Step 6

In a deep frying pan, pour about 3 to 4 inches of vegetable oil and turn on medium heat. Wait for 15 minutes, or until the temperature reaches 350 degrees.


Step 7

Place dough in oil and cook until golden brown, no longer than 5 minutes. Then, place on plate or pan, topped with paper towels in order to drain excess oil.


Step 8

Sprinkle powdered sugar on top of beignets. Feel free to add a honey drizzle.
